Kippers traditionally smoked using selected aromatic oak chips using a technique perfected by five generations of fishermen.
Our kippers are famed across the North East of Scotland and beyond. We take plump herrings, hand cut then brine them before smoking in our traditional kiln over whisky barrel shavings. For the ultimate breakfast, grill your kippers and serve with a couple of poached eggs.
