AYRSHIRE BACON FROM RAMSAYS OF CARLUKE MAIL ORDER
The reason Rick Stein came to visit, and made Ramsays one of his Food Heroes, was because their family has been producing this traditional Scottish cure for over 150 years. Ayrshire bacon is the traditional Scottish cure. Boneless and rindless sides of outdoor reared pork are cured then given time to mature and let the natural flavours develop. This is the same method used by their family since great- great grandfather started curing bacon on his farm. No added water means their bacon won’t shrink away in the pan and crisps up beautifully. LORNE SAUSAGES FROM AWARD WINNING BUTCHERS MURDOCH BROS
Square sausage remains a favourite in Scottish cooked breakfasts and is often eaten in the Scottish variant of the full breakfast or a breakfast roll. The square sliced sausage is also the ideal size to make a sandwich using one or two slices from a Scottish plain loaf.
