A kipper is a whole herring, a small, oily fish, that has been split in a butterfly fashion from tail to head along the dorsal ridge, gutted, salted or pickled, and cold-smoked over smouldering wood chips.

Traditionally smoked using selected aromatic oak chips, Sutherlands have been producing Kippers for five generations.

Care must be taken when eating Kippers because of the possible presence of small bones

Kippers traditionally smoked using selected aromatic oak chips using a technique perfected by five generations of fishermen.

Our kippers are famed across the North East of Scotland and beyond. We take plump herrings, hand cut then brine them before smoking in our traditional kiln over whisky barrel shavings. For the ultimate breakfast, grill your kippers and serve with a couple of poached eggs.


Your fish will be securely sealed and vacuum-packed individually and delivered in a polystyrene box with frozen gel packs.
